Last night the mister and I were totally craving Thai food, but so not wanting to go out in the rain, so we made Thai food at home. Pad Prik is a spicy sauce that is traditionally served with beef. This Pad Prik recipe is so easy, even if you don't cook Thai food.
Ingredients:
5 lime leaves
2 tbsp olive oil
3 large shallots
3 cloves of garlic
1 inch piece of ginger
2 red chillies
1 red bell pepper
1 cup carrots
1 cup green beans
2 tbsp red curry paste
3-5 tbsps of coconut milk
1/4 cup of water
1tbsp fish sauce (you can substitute oyster sauce or skip it all together)
Protein: any meat of your choice, we used tilapia, tofu works great in this dish too!

Directions:
Heat oil in pan, add lime leaves and sautee for a minute. Add the sliced shallots and let cook till tender, add the minced garlic and ginger, cook for another 2 minutes. Halve the red chillies and slice (if you don't want the dish spicy remove the seeds and ribs from the chillies). Dilute the 2 tbsp of red curry paste in the 1/4 cup of hot water, add the coconut milk and fish sauce, and let sauce simmer for 2 minutes. Add the protein of your choice, with the tilapia we let it cook for 3 minutes, add the diced veggies and let everything simmer till the veggies are tender, 10 minutes. Garnish with cilantro and serve over Jasmin rice.
